Peruvian cuisine harmoniously weaves together flavours from various corners of the globe. Influenced by its rich history and cultural diversity, the culinary tapestry of Peru reflects flavours from Spain, Italy, Japan, China and beyond. Peru’s unique landscape consists of an expansive Pacific coastline, the Andean mountains and the Amazon rainforest – providing access to vibrant and diverse ingredients – varieties of potato, corn, seafood, chilli, fruit and grains are used extensively in Peruvian cooking.

Chefs Andres Soldi and Franco Reverditto made Australia their home more than a decade ago. Their interest in local Australian ingredients has inspired their cooking and introduces high-quality seasonal produce to their Peruvian-fusion fare. Ballina prawns, grass-fed beef, Hinterland fruit and vegetables and locally-caught fish all make appearances on the menu. Their drive is to make the most of the fresh, local foods on the doorstep of the Northern Rivers results in an ever-changing menu pillared by cooking Peruvian techniques.
